Perfect Thanksgiving Dish

I have to share this receipe, perfect for the Thanksgiving holiday.  Paleo pumpkin and sage risotto-even my teenage kids love it and it is easy to make.

Ingredients:

1/2 onion, diced (or more-I used whole onion)

1/2 bell pepper, diced (i used the whole)

1 head of cauliflower, riced in food processor

1/2 C stock

1 tsp tomato paste

1 3/4 C pumpkin puree

2/3 C coconut milk

2 tsp garlic (i used more, am going to chop a few cloves next time and saute with onion)

1/2 tsp black pepper

fresh sage and nutmeg to taste, oil of choice for cooking

Steps:

Chop cauliflower and pulse in food processor until rice sized.  Set aside

In large pan, saute onion and pepper (and fresh garlic is used) until soft

Add cauliflower, sage, sasonings, tomato paste and stock to pan,simmer  covered, 10 min

Uncover pan and cook off any remaining liquid

Add pumpkin and coconut milk, simmer covered 5 min

Uncover and thicken to risotto-like creaminess, 5-10min

Top with grated nutmeg and serve
