I thought I'd start this thread so we can share our fav recipes/links to them... of course I don't have my favorites with me on hand, but definitely have a few go-to dishes.

My favorite post-workout snack or breakfast is acorn squash "oatmeal":

roast half a squash (I usually roast one or 2 at a time), and when you can handle the squash scoop the insides into a bowl.  Add the following:

1 Tbsp almond butter

1 tsp cinammon

--mix well!

  • I tried to eat pretty simple during the week, so grilled meat, lots of steamed veg and a little plant fat in each meal, with the occassional piece of fruit, but at the end of the week, on a recovery day, when my work day is over at 11am, I like to scan the many, many paleo websites for recipes. Now I am not a big pizza lover, but I was craving one tonight and I came across this recipe.

    2 cups of almond flour (1 used 1.5 cups almond flour + 1/2 cup of coconut milk, but that was because I ran out of almond flour. Mix in 2 eggs and 3 tablespoons of olive oil and 1/4 tsp of baking soda. I had no soda, so I left it out.

    Form the dough into a ball. Take a pizza pan and put some olive oil on it. Put olive oil on your hands and then push the dough slowly out to the sides. It should be very thin. I had enough dough to make a regular size pizza.

    It said to put the dough in the oven at 325 for 20 minutes. I did that, but for 15 minutes and half way through I flipped the crust. The edges did burn a bit, but just the edges.

    I then put pizza sauce, chicken, red pepper, mushrooms, olives and kale on top. I swtiched the oven setting to broil, and I baked it in the oven for 30 minutes.

    I was suprised that the crust did not brown up anymore than from the original cooking, so next time i will try the broil setting from the onset and leave it in for 20 minutes as suggested. The crust is easy to cut and like a thin crust pizza.

    I think this crust would be great to make crackers out of to. You could put in whatever spices you like. Anyway, I really enjoyed it. Had to leave some for Steve when he gets home, but have to admit that I could of eaten the whole pizza myself. Yummo

    Had to add a batch of steamed brocolli to my plate so I would not eat the whole pizza. Hope someone tries it and lets me know how it turns out for them.
  •  Brenda, I read the recipe and ran to my shelves and pulled out the bag of almond meal I hadn't used.  I used 2 cups  and the soda as I had plenty of each.  I baked the crust 20 min at 325 on a pizza stone without turing  and it only browned on the edges.  I then put sauce, fresh basil and spinach, peppers, red onion and chicken and broilded for the 30 min.  It didn't brown much, as you said, but was very good.  And, I nibbled the crust as a cracker so agree it could be a snack all on its own.  Good find!

  • The coconut egg custard was delicious. More like desert than breakfast. My wife made me a paleo stuffed cabbage recipe from cindy's table web site. I'm not sure how to insert it here. But it was very good and worth looking up.

    I found a recipe for a spaghetti bolognese that I LOVE... will add that here when I find it. And a stuffed chicken (had the leftovers for lunch)... I'll say one thing, I do not going hungry doing the whole 30!
  • The “Spaghetti” in Creamy Tomato Sauce sounds really good, and a good use for zucchini! We frequently substitute spaghetti squash for spaghetti as well.
  • Here is another. If you like Thai, which I do, especially peanut sauce, you are going to like this Thai "No Peanut" sauce . I put it on top of grilled chicken wrapped in lettuce leaves, and accompanied it with sauteed spinach and steamed brocolli.

    Its a very light sauce so would be nice to use as a sauce for spahetti squash perhaps?

    1/2 cup almond butter
    1/2 cup canned coconut milk or coconut cream concentrate (I used coconut milk)
    1/2 cup apple sauce
    juice of 1/2 lime
    1/4 tbsp of fish sauce (I omitted this, because I did not have any, so I put in 1 tbsp of braggs)
    1 1/2 tsp of grated ginger
    1/2 tsp of crushed garlic (I grated mine)
    Hot chili oil to taste (did not have any, but would of added it had I had some)

    Wish all ingrediants together in a medium size bowl and serve as a dipping sauce or over your favourite seafood or chicken. I really enjoyed it. Hope you will as well.

    Paleo Tuna Recipe: Looking for a new twist on tuna salad? Try a Mediterranean tuna.

    Mix one can light tuna (canned in water) with 1 tablespoon of olive oil, 1 tablespoon of lemon juice, cracked black pepper and 1/4 cup of finely chopped red onion and parsley leaves. Add sliced tomatoes and a few sliced kalamata olives.

    I like to serve this in rolled up Bibb lettuce leaves, or just shovel it into my pie hole as is! Yummy
  • Made a yummy bottom blade pot roast tonight. Only thing on it was rosemary. I put it on top of stewed tomatoes and cooked in a 350 oven for 2.5 hours. I added some brocolli, portebello mushrooms, mashed potatoe (for hubby) and spinach for me to the menu. Made some homemade apple sauce today and it going to be for dessert.

    Crock Pot Apple Sauce
    8 spartan apples, cored, but not peeled.
    1 tbsp of allspice
    1 tbsp of cinnamon
    1/2 cup of apple juice, but water would work just fine

    Yummy Sunday dinner for a cold day in OTown (-31c)
  • I made this Paleo Candy Bars. http://www.paleoplan.com/2009/12-03/paleo-candybars/ It was sooo good. I used muffin cups and devide it in 8, so each one is about 200 cal. I loved it!

    3 Tbs coconut oil
    1/4 cup carob powder or cocoa (optional)
    1/2 cup ground nuts (almonds, hazelnuts)
    3/4 cup unsweetened shredded coconut
    1 Tbs raw honey (optional, add more to taste)
    parchment paper

    1.Melt the honey and coconut oil in a saucepan over medium heat.
    2.Once combined, add the carob, ground nuts and coconut and mix together.
    3.Pour mixture onto a small baking sheet covered in parchment paper. Form into a square when cool enough to touch.
    4.Refrigerate until hardened. Cut into 4 servings.
  • If I made those Yasko I would eat the whole dish. I will take your word for it that they were good.
  • Curried Meatballs (makes 24)

    3lbs of ground beef
    1 cup of finely diced red onion (1.5 medium)
    1 cup of finely chopped apple (2 medium)
    1 egg ( I used two)
    2 tbsp of curry powder
    salt and pepper

    Preheat oven to 400. Place all ingredients in bowl and mix. Form meatballs just a little bigger than golf ball (I used an icecream scoop to ensure uniformity). Back in oven for 25 minutes.

    While the balls are in the oven, make the following sauce
    2 tbsp of coconut oil
    1 teaspoon of crushed garlic (i used one medium clove)
    1 tbsp of raw honey (optional - I used it)
    1 tbsp of curry powder
    2 tbsp of tomato paste
    1/2 cup of chicken broth (I used beef broth. Would probably use chicken broth if the balls were made out of chicken or turkey)

    In a large skillet saute the garlic in the oil over medium heat for about 2-3 minutes, then add the honey, curry powder, tomatoe paste and wish together. Add the broth and continue to wisk until smooth. Bring to a simmer. After meatballs come out of the oven, poor the sauce over the balls and put back in the oven for 5-10 minutes. Serves 6-7. I am sure they will freeze nicely as well.

    I served them with zucchini noodles and flash fryed collard greens for me. Hubby had mashed potatoe and steamed brocolli. This is a keeper. In fact I would double the sauce recipe. It was very yummy. It tasted like a sweat bbq sauce. It would be good as well with a little cayenne pepper or smoked paprika me thinks. Let me know if you try it and like it.
  • Brenda - I tried your pizza recipe, and our non-paleo family and I loved it. I put lots of stuff on top, basically whatever left over meat and vegis I had (porched chicken, sausage, spinach, red onion, peppers, etc.) I put sliced mozzarella cheese for 2/3 of pizza for my family.

    Robin - I loved your coconut custard. Will be trying many of your receipes you posted in your website. Thank you Ladies!

    I will be trying "Spaghetti" in creamy toto sauce I saw in everydaypaleo.com this weekend and let you now if it is good.

  • Paleo Bread
    1 ½ cups blanched almond flour
    2 tablespoons coconut flour
    ¼ cup golden flaxseed meal
    ¼ teaspoon celtic sea salt1 ½ teaspoons baking soda
    5 eggs
    ¼ cup coconut oil1 tablespoon honey
    1 tablespoon apple cider vinegar1.Place almond flour, coconut flour, flax, salt and baking soda in a food processor2.Pulse ingredients together
    3.Pulse in eggs, oil, honey and vinegar
    4.Pour batter into a greased 7.5" x 3.5" Magic Line Loaf Pan5.Bake at 350° for 30 minutes
    6.Cool and serve

    Please note: If you use a loaf pan that's bigger than the size recommended above, your loaf of bread will not "rise," it will be wider and shorter than the loaf in the photo above.

    Have not tried this recipe, but may need to when i am joanzins for bread
    .
