Cramping

I recently participated In IM Louisville and experienced some pretty severe cramping on my bike at about mile 40 and futher.  I had never had any cramping during any of my workouts, long or short prior to that.  Does anyone have a suggestion of what to eat during training and more specifically after coming out of the water in an Ironman.
