Thumbs up or down?

I am going to make this and report back, I will see if I can run the nutrition info as well. I am going to use pam and 1 TBSP of oil and lowerfat mayo. I will report back.

Artichoke Crusted Chicken

INGREDIENTS

2 six-ounce chicken breasts, pounded thin

2 tbsp olive oil

1/4 cup mayonnaise

1/4 cup artichoke hearts, drained and chopped (I used canned artichoke hearts, but frozen ones that have been thawed would be fine)

1/3 cup grated white cheddar cheese

Salt

Pepper

DIRECTIONS

Salt and pepper the chicken and then sauté each chicken breast in 1 tbsp olive oil on medium-high heat, for about 8-10 minutes, flipping once, or until the juices run clear when pierced with a fork. Set aside.

Mix together the mayonnaise, artichoke hearts and cheddar cheese until evenly distributed. Spread the mixture over the sauteed chicken breasts, and then broil at 400 degrees for about 3 minutes. Do not take your eyes off them — broiling can lead to burning faster than you can imagine. When the cheese is melted and bubbling and the tops are golden, remove and serve.

Serves 2.

  • Absolutely no good; I recommend that you dump this off at my house right now; I'll take care of the disposal. No really, I insist!
  • I took chicken out for dinner and was going to make Chicken Marsala, but this sounds WAY better! Will report back tomorrow- but I am not the chef that you are Steve!
  • Artichokes + mayonnaise + cheese is gonna make just about anything taste good.

    I like using a meat thermometer (the fancy electronic kind) to test the doneness of chicken breasts (I'll typically take it off the heat at 152 degrees) cuz it doesn't take much to tip them over the edge to dryness.

  • Sounds yummy. If you want to bring the fat count down, you could substitute greek or plain yogurt for the mayo, or mix the yogurt and mayo (1/2 and 1/2 or less).

  •  Very good, just had it. ! next time, i will try Penny's suggestion of the greek yogurt.
