Better than Nutella? - WARNING, Info contained may be dangerous
WARNING: Do NOT read further if you have "Nutella issues." I am not resposible for consumption of the following.
After seeing all the Nutella in Paris, I wondered if I could do something simlar at home - without the diary, soy and other ingredients. Last night, I made this:
- roasted 1 cup hazelnuts at 450 degress F for about 7 - 8 minutes
- let them cool, then removed the husks using a kitchen towel (rub them with the towel)
- put the nuts in the food processor with about 1/3 cup dark chocolate
- mix for 3 to 5 or so minutes until desired consistency reached (if you want smooth, just keep going)
OMG! Seriously - OMG! I was standing over the food processor with a spoon and John says (after trying a sample), "Just because you made it at home doesn't make it healthy." I almost skipped the dinner we'd just made to eat it out of the food processor with a spoon.
Roasting the nuts gives it a really, well, nutty quality. It does harden in the fridge quite a bit over night.
I expect you can do this with any nut. I know in Whole Foods they have grind your own peanut butter with chocolate. I can see doing almonds, etc with some chocolate added. I occasionally make my own nut butter at home, so it is quick and easy. Keeps in the fridge for a while. 1 cup nuts makes about 1/2 cup nut butter.

Actually...not so much. As yummy as this sounds, for Paleo eaters, sugar is kind of out the window. But it does sound delish.
