Core Diet Crock-Pot meal?
Help needed! We're looking for core diet crock-pot meals.
My family recently switch to pre-fixing and freezing 10-20 crock-pot dinners at a time. This saves sooooo much time with both of us training for long distance triathlon. We make one big grocery run and spend 4 hours prepping for the rest of the month. Each weekday morning we put one in the crock pot. For dinner we just fix a salad and/or side items.
The problem is that most of our recipes use rice, pasta or potatoes. We're going to try quinoa instead of rice. My family isn't that big a fan of spaghetti squash.
Other thoughts? Recipes?

I love the recipe for the Spicy Chicken soup from Carraba's - it is Core compliant if you remove the pasta and potatoes although as a functional nutritionist I must say that white potatoes have a very high antioxidant content which is helpful for mitigating the ROS production during cellular breakdown :-)

You can put everything in the crock pot and cook it on low until you get home, removing the chicken (careful with the bones!) and then adding back in the chicken meat. I added a little bit of Webber's Kickin' Chicken seasoning for extra spice.
Alternatively for anyone without a crock pot looking for a quick and easy soup - I made this with buying pre-chopped mirepoix and green peppers, used boxed low sodium chicken stock, and cooked on the stove until veggies were cooked, adding in a cooked rotisserie chicken at the end before serving.
