Dinner at Kellie's House in Prospect Friday, October 13

Good idea to start a dinner thread and hopefully we can figure it all out. I live about :30 from downtown Louisville, about 2 miles from the IM bike course at River Road and Hwy 42 in Prospect. Heading to a restaurant is fine but if we can pull it off we love to host and I find it is easier to talk and meet everyone. I was thinking about having some type of buffet catered like Qdoba or Buca di Beppo or a buffet of different pastas, separate sauce, protein, sweet potatoes ect. and build your own. I start working on site on Monday and maybe can shuttle people to my house as well, I'm sure we can figure out transportation. Post if you are interested, preference for food and dietary restrictions.

Interested if I can get a ride...
I know in past year's we've gotten a private room or section at a restaurant if our sherpa @Trent Prough - gets on that about a month ahead of the race... So the socializing aspect is easier..
if you can pull it off, happy to invade your home :-)

btw, just looked up my calendar from 2011, and we did the team Dinner at BlueGrass Brewing Co, 300 W main street. 1st time I shook Tim Cronk's hand!

I'd prefer dining at Kellie's too. Catered would be logistically easier and I like the buffet of different pastas, etc. option. I'll have a Honda Pilot and can take 3 passengers comfortably, 4 if my wife isn't with me.

Here are my thoughts for dinner and please chime in on ideas or what you prefer. We have plenty of time to work this out. Sounds like we will have plenty of car space too.

1. Qdoba catering hot bar-Wanted to offer this because how much pasta does everyone want to eat all week? I know it's Mexican but it is flexible and someone could eat a plate of grilled chicken, rice and beans.

Let your guests create their own Mexican-inspired feast – nachos, tacos, and burrito bowls – piled high with all of the toppings they crave. Each hot bar order comes complete with everything you need to serve a memorable meal.

Hot Bar

Handmade white corn tortilla chips tossed with lime and kosher salt

Protein

Choose one of the following protein options:
Adobo Marinated Grilled Chicken
Adobo Marinated Grilled Chicken and Adobo Marinated Grilled Steak
Adobo Marinated Grilled Chicken and Smoked Brisket

Rice

Choice of one or both:
Cilantro-Lime Rice
Seasoned Brown Rice

Beans

Choice of one or both:
Savory Black Beans
Pinto Bean

Toppings

Hand-Smashed Guacamole
Lettuce, Shredded Cheese, and Sour Cream

Salsas

Pico de Gallo, Roasted Corn Chile, Salsa Verde and Salsa Roja

Add crispy corn shells, flour tortillas, queso or fajita veggies

2. The other option I can try and create a bar of grilled chicken, potatoes-white and sweet, simple sauce, regular pasta and a gluten fee pasta, bread, meatless lasagna. Salad? Fruit?

I absolutely love this idea (option #1). This is perfect! Just let us know how much to pitch in!

I almost never eat pasta and would much rather to rice, beans, veggies and guacamole!

totally agree on the tex/mex vs Pasta!
Can we really say no to brisket?
Assuming the brown rice is whole grain & the cilantro lime is white, I'd go brown
black beans over pinto if we have to choose.
suggest you get lots of extra guacamole!

@Scott Dinhofer -I have only heard from 4 people but all have agreed on Option 1 the Qdoba catering. This works perfect for me because I'm working Ironman all week and this option makes things easy. We are excited to have Pro's back this year and they usually end up loving Louisville and we love having them. I have hosted pros for 7 years and understand the dietary concerns. They are welcome to pack dinner and join us or they are welcome to use my kitchen to cook for themselves. Who is hosting them? I know we are still looking for hosts for 3 of our pros.

Time is flying by!! Qdoba will be served. I thought it might be a good idea to start trying to get RSVP numbers, how many people can drive and a preferred time. I set up a google document just fill it in.
