Interesting article. I happen to like beets, but not sure on the study. It might be slightly flawed. The article stated "The research team conducted their study with eight men aged between 19 and 38." The number of subjects in the study is small to make conclusive conclusions. Would be interesting to see their protocal for selecting their subjects (e.g. were all eight exactly the same other than their exact age.)
I read a similar article last Fall & tried beet juice w/my high school XC runners. We decided that NO amount of speed and/or endurance is worth the taste.
Just tried a new recipe today: 3 beets (including tops) 2 apples, 1 pear and a chunk of ginger. It was really tasty, but then again, I love eating them too, so perhaps I'm biased. Adding the sweetness of the apples/pear and a bit of spicy sharpness from the ginger balanced everything very nicely.
