Do VO2 intervals need to be contiguous?
In the name of efficiency, I'm trying something new tomorrow, running to the pool (5k either way). If I do my scheduled run as 800m,1600m @z5, swim, then 800m,1600m@z5, am I getting anything useful out of those intervals? If I do the workout as prescribed, it'll be 2x800, 2x1600.

Will it be the optimal training effect vs what is written? No. VO2 workouts are typically written with equal rest vs work to keep the HR up.
Ultimately, it's easy to get geeked out about 'is this going to help me or not'. Work works, consistent work works consistently. If that is what youve got to do to fit it into life, do it. If you have the flexibility to do it as written, then maybe consider doing it that way.
