Balsamic Glazed Salmon

4-6oz salmon filets

1 cup balsamic vinegar

2 teaspoons of extra virgin olive oil

1  teaspoon of fresh lemon juice

salt and pepper

Heat oven to 350 degrees

Season salmon with salt and pepper

Bake until opaque throughout about 10-12 minutes

While fish is cooking place vinegar in small saucepan.

Cook over med-high heat, stirring freqently, until reduced to 1/3 of a cup about 8-10 minutes

Remove from heat, whisk in olive oil and lemon juice, and season with salt and pepper.

Drizzle over salmon

 

Tip: Serve with a serving a fresh green beans sauted with some garlic.

  • I gotta try this one! I eat salmon at least 2x per week and an alternative prep would be a nice change.
  • I’ll have to give that one a try. This is the recipe I use. The sauce is also really good with grilled beets.

    Balsamic Glazed Salmon

    1 Tbsp Olive Oil
    2 large Garlic cloves, chopped
    1 Tbsp Honey
    1 Tbsp Dijon Mustard
    1/3 cup balsamic vinegar
    4 Salmon fillets, skinned

    In small sauce pan cook olive oil and garlic until soft - do not brown. Add honey, mustard, vinegar, salt and pepper to taste. Stir and simmer until thickened, about 3-5 minutes. Sauce should coat the back of a spoon.

    Coat salmon fillets with olive oil and season with salt and pepper. Grill over high heat 4-6 minutes a side.

    Top salmon with sauce.
  • I made this last night, thanks! I used OJ in place of the lemon juice (I couldn't get the top off of my lemon juice - it was that kinda night), and I drizzled the sauce over the fish when it was about halfway done instead of at the end (the sauce finished early and threatened to become a blob of goo). And then I ate the salmon on top of a spinach salad (with goat cheese, strawberries and red onions). Yum yum.
