 I'm doing the Texas ironman camp and need to ship my bike but am not capable of building it myself. Does anyone know a good bike shop there in the woodlands I can ship to and have them build. All my cables ruin through the aero bars

There'll be plenty of folks there, including our fearless leader Coach P (please stand up!), that know how to reassemble a bike! Why pay a shop to do it?!?
It's something you should learn to do any way, IMO.

I can help with the basics. How much disassembly is necessary? Typically remove wheels, pedals, seat/post and remove handle bars leaving all the cabling attached. Just mark everything so we know how to put it back together.

If it's more complicated than that, I may be over my head!
